From my digital workspace in Miami, Florida — a true crossroads of North and South American culture — my dive into the food world started on the sweet side of the industry, analyzing logistics and business planning for the chocolate and confectionery markets. But when it comes to what I actually want to cook and eat, my mind goes straight to sizzling grills, heavy smoke, and bustling street food stalls across the Americas.
