Smash Tacos: The Burger-Taco Fusion Everyone’s Griddling

A ball of seasoned beef smashed flat onto a flour tortilla, seared until the edges lace and crisp, then flipped, cheesed, and dressed like a taco — smash tacos are the burger-taco collision that took over every griddle on the internet, and they earn the hype.

Born on backyard flat-tops and TikTok griddles, the smash taco applies the smashburger’s greatest trick — maximum crust through maximum contact — to the taco format. The tortilla fuses onto the beef as it sears, so every bite gets crisp lacy meat, melted cheese, and soft tortilla in one layer. Top it burger-style with shredded lettuce and sauce, or taco-style with onion, cilantro and salsa. There are no wrong answers, only crispy ones.

Why the Internet Fell for the Smash Taco

It’s the logical endpoint of two obsessions this site knows well: the smashburger’s Maillard crust and the taco’s perfect handheld format. Fusing the tortilla to the patty solves the burger’s structural problem (buns slide) and the taco’s richness ceiling (more beef contact, more crust). Cameras love the smash; mouths love the crunch.

The Technique

Smash through the tortilla. Set the beef ball on the hot griddle, lay the tortilla on top, and press hard with a spatula for 10 solid seconds. The beef spreads to the tortilla’s edge and welds to it.

Flip once, cheese immediately. When the edges are deep brown and lacy (about 2 minutes), flip tortilla-side down, season, and cheese while the tortilla toasts. Sauce, stack, fold, repeat.

Ingredients

The smash

  • 1.5 lbs ground beef (80/20), rolled into 8 balls
  • 8 small flour tortillas (taco size)
  • 8 slices American cheese
  • Salt and black pepper
  • 2 cups shredded iceberg lettuce

Toppings & sauce

  • 1/2 white onion, finely diced
  • Pickled jalapeu00f1os or dill pickles
  • Burger sauce: 1/2 cup mayo, 2 tbsp ketchup, 1 tbsp mustard, 2 tbsp minced pickles
  • Optional: cilantro and salsa for taco-style

Method

  1. Make the sauce. Stir together mayo, ketchup, mustard and minced pickles. Set aside.
  2. Heat the griddle. Get a griddle or cast-iron pan smoking hot over high heat.
  3. Smash. Place a beef ball on the griddle, lay a tortilla on top, and press down hard with a wide spatula for 10 seconds so the beef spreads to the tortilla edge.
  4. Sear. Cook about 2 minutes until the beef edges are deep brown and lacy. Season the beef side.
  5. Flip and cheese. Flip tortilla-side down, lay cheese on the beef, and cook 1-2 minutes while the tortilla toasts.
  6. Dress. Top with sauce, lettuce, onion and pickles (or onion, cilantro and salsa), fold, and eat immediately.
